last night’s dinner~lemon-garlic herb chicken

I am loving this cooking thing. I am trying new things, using fresh food, and using fresh herbs that I bought. I am getting more confident and look forward to changing up some recipes as I get more comfortable with different flavors and tastes. And one day I’ll actually invite my friends over to partake with me 🙂

I used my new Rachel Ray cookbook, Big Orange Book, and found this recipe for lemon-garlic herb chicken. There were also some side dishes included in the meal, but I only made the asparagus (minus the prosciutto)

So the chicken was OK, probably a 3 out of 5 stars. It was very moist. The fennel seeds gave a strong licorice taste, at least I think it was the fennel, which I didn’t really like. I think next time I will reduce the amount of fennel and olive oil, and add a bit more salt and pepper. And I so want to try the prosciutto wrapped asparagus.

I will definitely make again, it was pretty easy, and I got to use my fresh herbs. And now I have a few days of leftovers, yeah!
